I’m curious, does this person not eat cows because historically they’ve never posed a threat to people? Or is it cannibalism to eat fish because we evolved from them at some point?

I absolutely hate people throwing around the word ‘sentient’ like they know what it means. If you just read any dictionary it’s pretty obviously not some arbitrary word you can use to say it’s ok to kill animals.
